Description

The Vin Santo Chianti Colli Fiorentini DOCG “Torri della Colombaia” by Tenute Beltrami stems from the desire to preserve one of the highest expressions of Tuscan winemaking tradition, in an era when the value of time and patience is increasingly rare.

This Vin Santo is the result of meticulous and deeply artisanal work, which begins with the manual harvest of Malvasia Bianca del Chianti and Trebbiano Toscano grapes, selected with extreme care. The clusters are then left to dry in the vinsantaia for 4–5 months, with continuous monitoring to preserve their integrity and sugar concentration.

This is followed by gentle but decisive pressing, which yields a particularly rich free-run must that undergoes vinification in traditional caratelli located in the attic of the ancient dovecotes, the place from which the wine takes its name. Here the Vin Santo rests and matures for at least 4 years, slowly developing complexity, depth and character.

After the first racking, aging continues in bottle. In the glass it presents the typical amber color of Tuscan Vin Santo. On the nose it releases aromas of dried fruit, accompanied by elegant citrus notes. The palate is enveloping, deep and persistent, perfectly balanced between sweetness, freshness and structure.

A meditation wine, symbol of time, dedication and absolute respect for tradition.
